wales PRODUCERS

Exceptional cheese from Wales

From rolling valleys and mountain landscapes to the Welsh coast, discover the independent cheesemakers and artisan producers we work with across Wales. Their cheeses reflect generations of craft, distinctive local ingredients and a strong connection to the land.

Trefaldwyn Cheese — Montgomery, Mid Wales

Award-winning Welsh cheese, rooted in the pastures of Montgomeryshire.

Trefaldwyn Cheese began in 2018 when former primary school teacher Clare Jones swapped the classroom for cheesemaking. Starting with experiments on her kitchen table, Clare developed Trefaldwyn Blue, named after the Welsh name for Montgomery, and went on to win Gold and Best Welsh Cheese at the World Cheese Awards.

In 2023, Clare handed the Trefaldwyn story over to third-generation dairy farmers Glenn and Sandie Lloyd of Daisy Bank Dairy. Today the cheese is made using organic milk from their own herd at Gate Farm near Llandyssil, where the cows graze organic herbal and clover-rich pastures and the family follows regenerative farming practices.

Trefaldwyn Blue is bold, creamy and beautifully golden with distinctive blue veining, while the newer Ruby Red brings something completely different — a soft, Brie-style cheese with its striking red appearance.

It's a brilliant example of modern Welsh cheesemaking: an award-winning recipe passed into the hands of a farming family who can take the story from pasture and herd right through to finished cheese.

South Caernarfon Creameries — North Wales

Welsh cheese made by a co-operative owned by the farmers who supply the milk.

Based on the beautiful Llŷn Peninsula in North West Wales, South Caernarfon Creameries is Wales’ oldest and largest dairy co-operative, established in 1938 when local dairy farmers came together to create a better way to market their milk. Today, the farmers who supply the creamery remain its owners, giving them a genuine stake in its future.

Cheesemaking began at the creamery in 1959 and generations of experience now go into an extensive range of Welsh cheeses. Importantly, the creamery maintains a policy of processing only Welsh milk, sourced from its farmer members across North Wales, Mid Wales and Ceredigion.

Under its well-known Dragon brand, the creamery produces everything from traditional Welsh Caerphilly and mature Cheddars to more contemporary handcrafted cheeses. Traditional skills remain part of production too, including hand-salting cheese on open tables.

One of its most distinctive creations is Welsh Slate Cavern Aged Cheddar, matured underground at Llanfair Slate Caverns near Harlech, giving the cheese a wonderful connection to the landscape and heritage of Wales.
